Looking for a new Thanksgiving side? Try this easy, tasty and lighter roasted cauliflower this year. Smoked paprika is a strong spice with a lovely flavor - it pairs nicely with pine nuts and sweet raisins. I bet you’ll make this dish again and again!
1) Scatter cauliflower florets on a baking sheet and drizzle with olive oil. Lightly salt and pepper to taste and add smoked paprika, sprinkling spices evenly across all of the cauliflower.
2) Roast cauliflower in the oven at 350 ℉ for about 25 minutes. Cauliflower should begin to turn golden brown in color and become quite tender.
3) Remove cauliflower from the oven and turn lightly with a spatula or spoon. Add pine nuts to the cauliflower, sprinkling evenly across the baking sheet. Return to the oven for an additional 10 minutes.
4) Remove cauliflower and pine nuts from the oven and transfer to a serving dish. Toss raisins with with hot cauliflower and pine nuts. Garnish with chopped fresh parsley, if desired, and serve immediately.
