A marriage between wedge salad, cobb salad and a BLT sandwich, these lettuce cups bring the best ingredients together in a single, fun dish! Try Chicken Avocado BLT Cups as a new way to serve a light salad meal, or as an appetizer that’s healthy (mostly) and sure to impress!
Serving size: 10 lettuce cups
10 large leaves of bibb or romaine lettuce
6 ounces grilled chicken, chopped
½ large avocado, diced
10 grape or cherry tomatoes, sliced
4 slices cooked bacon, chopped
2 tablespoons mayonnaise
2 tablespoons sour cream
1 teaspoon lemon juice
1 teaspoon worcestershire sauce
3 tablespoons blue cheese crumbles
dash of salt and freshly ground black pepper
1) Arrange the lettuce leaves side-by-side on a large platter. Rest the sides of each leaf up against one another to provide support and create a cup.
2) Divide the chicken, avocado, tomato slices and bacon evenly among the lettuce cups.
3) In a small mixing bowl, combine the dressing ingredients with a whisk or fork. Spoon the dressing evenly across the lettuce cups. If desired, top with more freshly ground black pepper.
It can be fun to eat these lettuce cups with your hands, like a taco. But, if you prefer to be less messy, serve them on a plate and eat with knife and fork. Enjoy!
